Bo’ness sisters have the best sausage in Scotland

Two sisters from Bo’ness have become a sausage sensation after their butcher’s shop lifted the title for Scotland’s best speciality sausage.

Jane Ross and Emma Burns have dedicated their title win to their father Michael (78), who championed them joining the family business, Thomas Burns and Son.

The ladies secured the Diamond Award and the Best Speciality Sausage title in the Scottish Craft Butchers Awards 2020 with their unique combination of pork, applewood smoked cheese and leek sausage, proving their original banger is the best in the business.

The sisters were delighted to see their tasty sausage bring home a Diamond Award for the Market Street business.

Jane explained: “This sausage formed part of our new summer food range and has proved a winner with our customers.

“To see it wow the judges as well is fantastic – we’re so thrilled. This is ultimately what we all want – the Diamond Award is the big one.”

Jane (41) and Emma (37) now own the business which was started by their grandfather Thomas Burns in 1954.

Incorporating a butchers shop and a delicatessen, the business employs 10 people including chef Barbara Wilson, who the sisters credit with perfecting the championship sausage.

Jane continued: “Dad taught us everything and gave us the skills and the confidence to takeover the business. This award is just amazing and it’s all thanks to Dad –this is for him.”

The Covid-19 pandemic has seen changes imposed on the business, which is working flat out to ensure customers - particularly the most vulnerable – are kept supplied with products.

Jane said: “Our customers have supported us for years and, as Bo’ness’ only butchers, it’s important that we are there for them – now more than ever.”

The business was also shortlisted for a Diamond Award in the beef burger category but were pipped in the final judging.

Jane added: “To be shortlisted for two national butchery titles is huge – and to win one is a dream come true.

“We’re all absolutely delighted and the whole of Bo’ness will be buzzing with our success.

“We have a great customer base who love to see us do well.”
