Meat in the Middle opens Bainsford-based online burger delivery service

The owner of a new Bainsford online burger delivery service is relishing his opportunity to expand the family business into Falkirk district.

Mark Gilmour opened his Meat in the Middle franchise last week much to the delight of food fans who have been lapping up the fare on offer.

The business was originally started in a Kilmarnock pub kitchen by Mark’s brother, Ross, whose meaty creations proved so popular with punters he decided to branch out during lockdown.

Offering 100 per cent Ayrshire-sourced steak mince – and an array of sides – Meat in the Middle lets customers choose what goes on their burger.

Mark said: “It went from being a pub kitchen to a £1 million business.

“We got meat to do the burgers from a butcher’s in Kilmarnock and it went wild. It got so busy we had to get new premises in Glasgow.

“We opened here last Tuesday and we’ve been mobbed. People were having to wait three-and-a-half hours for deliveries but the reaction has been phenomenal.

“Everybody has been really supportive so we couldn’t ask for anything better.

“My sister, Jillian, is opening one in Ayr. By the end of the year we hope to have nine locations across Scotland.

“We do either single or double burgers and you choose the toppings yourself. Everything on it is yours – no two burgers are the same.

“It’s similar to Five Guys Burgers and Fries but we’re a bit cheaper and 100 per cent fresh.

“The full business is about giving back to the community; we gave free deliveries to hospital wards during lockdown.”

Having previously worked at Optical Express and as a support worker, Mark says he adapted quickly to his new role.

He also reserved praise for the colleagues who have helped him to set up his Bainsford branch.

Mark said: “It’s been a big change but it came naturally; my mum had kitchens.

“It’s tough but I have a good staff team and it should be alright. Everybody so far seems to be loving it!”

Meat in the Middle is open seven days a week from noon until 10pm and offers delivery and collection services only.
