A hunger to succeed in business is helping two friends serve up the district’s latest takeaway dining option.

Nudel opened in Falkirk town centre just days before Christmas and the pair already have plans to open further noodle bars across Central Scotland.

James Ridley and Colin Cunningham, both 25, met at Braes High School and one thing they had in common was the desire to be their own boss.

The pair went to university – James doing business studies at Napier and Colin, of Wallacestone, mathematics at Heriot Watt – before entering the financial industry.

On a visit to Colin, who was working in London, he and James looked at different business ideas to take forward and realised the popularity of noodle bars provided them with a solution.

James, originally from California and now living in Laurieston, said: “We realised healthy, fresh, locally sourced food, cooked in an Asian style was a big seller. We also thought there was a lack of healthy options available in Falkirk and backed this up by carrying out a survey of what was on offer.”

The pair drew up a business plan and got support from Business Gateway as well as funding from the Prince’s Trust.

James added: “They all seemed impressed that we had plans to market our brand rather than just open one takeaway. We also support other businesses by sourcing ingredients from suppliers in this area.

“Our aim is not to hit the cities, but rather towns throughout the area.

“We also hope to cater for specific dietary requirements, such as people who are gluten intolerant.”

The Manor Street premises opens until 1.30 a.m. on Fridays and Saturdays which the pair said offers people out late at night a healthy alternative to the usual ‘midnight feasts’.
